Prawn and Pepper Salad

Since starting Tony Ferguson, I’ve started to enjoy cooking. Almost to the point where I’d rather spend money on some quality ingrediants & see what I can come up with, rather then go out and try and find something on the menu that fits with the program.
One of my first inventions was this Prawn & Pepper Salad.
Prawn & Pepper Salad
Ingredients
120 grams prawns (Protein allowence)
1 tablesoon Olive Oil
1 tablesoon Sweet Chilli Sauce
1-2 cups of salad leaves
1-2 Peppers (Cut into strips)
1/2 cut of broccoli floretts (Cut into small pieces)
1/4 cup of button mushrooms (Halfed)
Method
- Set aside the salad leaves in a serving bowel or plate
- In a large frying pan, heat the olive oil.
- When heated, add peppers & mushrooms and fry lightly
- Add broccoli as peppers soften
- Cover with Sweet Chilli Sauce (This will allow the brocolli to soften as it’s steamed)
- When the brocolli softens, move everything to one side of the frying pan.
- Add prawns, and fry for 1 to 2 minutes
- Set aside for 4 or 5 minutes to allow to cool.
- Add contents of pan to salad leave, mix & serve.
