Prawn and Pepper Salad

Since starting Tony Ferguson, I’ve started to enjoy cooking. Almost to the point where I’d rather spend money on some quality ingrediants & see what I can come up with, rather then go out and try and find something on the menu that fits with the program.

One of my first inventions was this Prawn & Pepper Salad.

Prawn & Pepper Salad

Ingredients

120 grams prawns (Protein allowence)

1 tablesoon Olive Oil
1 tablesoon Sweet Chilli Sauce

1-2 cups of salad leaves
1-2 Peppers (Cut into strips)
1/2 cut of broccoli floretts (Cut into small pieces)
1/4 cup of button mushrooms (Halfed)

 

Method

  • Set aside the salad leaves in a serving bowel or plate
  • In a large frying pan, heat the olive oil.
  • When heated, add peppers & mushrooms and fry lightly
  • Add broccoli as peppers soften
  • Cover with Sweet Chilli Sauce (This will allow the brocolli to soften as it’s steamed)
  • When the brocolli softens, move everything to one side of the frying pan.
  • Add prawns, and fry for 1 to 2 minutes
  • Set aside for 4 or 5 minutes to allow to cool.
  • Add contents of pan to salad leave, mix & serve.

New Beginnings

And so today I start the Tony Ferguson Weightloss program.

I’m not sure what I want this blog to be. I don’t want it to become a self indulgeant, ‘look at me’ type of blog. I’d rather it become a resource for me, and for anyone struggling with weight who happens upon it. I guess over time it will find it’s feet, and become whatever it is meant to become.

We shall see!
